Duckland uses ducks from Silver Hill Farm Hill in Ireland, which breeds what some in the industry consider to be the ‘wagyu’ of ducks. These birds are raised in spacious, temperature-controlled environs and fed a diet of wheat, maize and soy that contributes to its succulent, soft meat. Incidentally, these are the same birds used at the London Fat Duck restaurant chain in Singapore and also the famed Four Seasons Chinese Restaurant in London (its outpost in Singapore has closed down).

On the Asian side of the casual full-service eatery, there’s the quintessential Roast Duck ($28 half; $50 whole), featuring the Irish bird massaged with herbs, spices, wine and roasted in a combi-oven, plus Duck Fried Rice ($10) and Duck Broth ($5).

Here’s where Duckland differs from its rival Chinese-style duck restaurant chains. It also offers hipster angmoh dishes, like the Duck Confit & Waffle ($20; see below) topped with butter and maple syrup, a Duck Pie ($6; pictured above), featuring fine pieces of duck meat wrapped in shortcrust pastry, and Spaghetti Duck Bolognese ($13).

Of course, there are non-duck dishes, too. Like an Irish Lamb Stew ($22), Bacon, Cabbage & Colcannon ($20; pictured above) an Irish and Scottish dish of mashed and boiled cabbage and potatoes with bacon, plus Charcoal-Grilled Baby Back Ribs ($28).

Chinese restaurant chain TungLok — you know, the one owned by Nathan Hartono’s uncle — is opening a mod Chinese roast duck eatery tomorrow (Jan 18) at United Square Shopping Mall. It’s adorably named Duckland and offers a range of both Asian and Western-style-duck dishes — think typical Cantonese offerings like Roast Duck and angmoh stuff like Duck Pie. It’s not to be confused with TungLok’s Peking duck restaurant TungLok Xihe at Orchard Central.
